Co-op Cafe Organic Beet Salad
2 pounds organic beets
1 carrot, peeled and shredded
1/2 red onion, fine chopped
1 bunch fresh chives, fine chopped
2 Tbsp olive oil
2 Tbsp apple cider vinegar
1 tsp salt
Boil beets until tender. Cool, peel and cube. Add carrot, onion and chives. Toss with olive oil, vinegar and salt
